Hey hey hey hey yo. I don't blog much nor go online for long these days sia... except for facebook which seems so addictive wid all these 'how well do u know me' quizzes proliferating every inch of facebook. At the current moment... I'm sort of (and keen to be) Pastor Peggy's 'Apprentice'... or rather Pastor Peggy's Little Helper :D I learn so much from her n my cell leader Pastor Sunny n like well... they both think someday I could (and I want to!) replicate Ps. Peggy et al... ah well..

If u already know me personally,.. I scarsley think ANYONE would see me as a 'spiritual' person or anywhere along that line. And to be honest I have not been. Everytime and everyday I'll do something stupid or say something silly and end up defeated n 'lost' before God... I hardly talk about God or my faith, n I dont think I've blogged about Jesus much or even proclaim his Word to the people I talk to. Only until rather recently. Ps. Peggy said I have a 'good' mind but I've just used it in the wrong places n corrupted myself. I myself believe I've been corrupted n consistently corrupting myself for the past 28 years or so.. call it bad upbringing but I rather call it a 'lifetime of rebellion and self gratification'. Yes I take full responsibility of my vile nature and I wont compare myself to people 'holier' than me or those who are 'worse' than me. For all I know, I'm just as bad as a sinner as a rapist, murderer, theif and terrorist. *sigh*. Now I sound 'emo'... geez... I'm currently studying the following:

Victory over the Darkness, Realizing the Power of Your Identity in Christ. This is probably the first book every new believer or struggling Christian should read. I've just gone past the first few pages and this should be what I could call the 'foundation' of our faith. A good start. :D

In the Grip of Grace by Max Lucado.. this is what I read in the lunchroom during my breaks at work. Its a biiiiit far fetched... but well I guess its still a good read for nubies. Ahaha!! Ok ok I guess I'm being a bit biased here... but thats just MY opinion. I'm sure others will find this a great read... especially since its main topic is on the doctrine of Grace... which is too often mis-interpreted by even 'seasoned' Christians sometimes...
The Bondage Breaker... this one I havent read it yet but I bought it as well. Bondage Breaker is the sequel to Victory over the Darkness, but of cos it focuses on real-life issues facing Christians all over the world.. habitual sins and 'issues' too dark to be spoken about in public. Lets face it, we ALL wear masks and try to look cool n 'everything is alright' in Church... but in reality... at least in my opinion.. we ALL face many personal issues and 'embarrasing' habits and thoughts and sometimes (more often than not) are STUCK in a cycle of confess-sin-confess-sin which becomes frustrating and often causes Christians to stumble, backslide and sometimes even abandon the faith altogether.

I wonder why am I blogging stuff like this... I normally talk/blog about jokes and silly things. I guess I've been thinking a lot.. plus the discipling sessions I've had with Pastor Peggy is slowly shifting my paradigm of thought patterns and well.. I really wanna be her apprentice. And perhaps 'beyond belief'... I wanna replicate her life and in my own way help others achieve their victory in Christ someday as well.

As for now, I'm MILES away from achieving my own victory... from years of unforgiveness, bitterness, practice of the occult, and submitting myself to all sorts of bondages... bit by bit this big ball of 'knots' will ben un-knotted bit by bit by the the power of my Lord Jesus. Its a long shot but I know I can do it,.. .and someday.. SOMEDAY help others do it as well.

But it all comes with a price... several prices I guess. I... *sigh*.. I get depressed just THINKING about it... I cant be such a clown anymore these days *tho I cant help it sometimes*.. like gotta be more serious n grow in maturity I guess. Its hard... and it sucks!! I wanna play around n make ppl laugh etc etc... but can I really mesh together my personality and also be disciplined in what I discover from these books n discipling sessions? Gyaaah!! *bangs head on desk*

I think I just fell.. *sigh* On one hand I'm hopeful to succeed at all this.. on the other... I feel like I'm gonna DIE halfway thru... or I might sound arrogant by doing all this... or ppl gonna laugh at me or wadeva.. *sighhh*. Ah well....

Yay my 1st entry with my new blog skin ahaha. Jus thot I'd pen down some of the stuff I've been reading the past 2 months. I finished 7 Days in Heaven in just a few hours today... partially while walking/sitting around at Apsley earlier. I met the speaker Ps. Emmanuel Twagirimana last night (Sat 18th Apr) in a ministry meeting and was rather astonished at his testimony. Being dead for 7 days after a bomb attack in the Rwanda genocide of 1994, Emmanuel spent some time walking and talking to Jesus in heaven, and he explains a myraid of images which he witnessed beyond the Pearly Gates. Then he was sent back to earth, maggots eating thru his decomposing flesh and all, got up and started preaching the Good News of Jesus Christ to those around him. The way he explained people 'running and screaming' at his appearance was actually quite hillarious. XD GOOD READ

This one my hero Tony Anthony... His grandfather (and grandmaster) has the same surname as myself... so I got the honour of having a private chat with Tony himself earlier at Church today (what a privellege!!) for about 15 mins or so... we talked abt a lot of stuff and I had an amazing time nevertheless. Taming the Tiger is a must read, even after listening to his sermon... as all the dreadful details of his past become unveiled page by page... Its hard to stop once u start the first page. :DThis one is not for the faint hearted. I took a whole month to finish this. In conjunction with doing 1 on 1 discipling with Pastor Peggy (we're going thru the series 'Freedom in Christ for Young Adults' once a week) Set Free provides a hurricane of details on every facet of human sin and deception... its... u cant really read this book by yourself without some guidance from a trained counsellor.

Well thats my book reviews for the day. Either Jean or Jane asked me earlier if I liked reading books... thats a tough one. I used to read a lot till I got sick of it... now I'm reading again. I used to feed my brain with so much rubbish until well... u can tell just by the way I talk... its.. quite evident. Full of crap lah y'know. But I guess just recently I decided to START filling my brain with books WORTH reading and listening to worthwhile Christian audio programmes. I've suddenly become a fan of Ps. Kong Hee of the infamous City Harvest Church (I KNOW a LOT of people have nasty things to say about him okay... but try listening to ONE of his sermons and then decide to criticise blehhh). Hahaha... 'infamous' cuz its famous but so many ppl got bad things to say tsk tsk tsk. I love that guy okay... I'm even a 'fan' of Kong Hee in Facebook :D

Wow I've actually written quite a lot for a 1st time.. nice... honestly I wanted to write some really heartbreaking events... but... I guess I can rise above them. God's grace is more than sufficient. And He also requires that we forgive,.. less we condemn ourselves in the proccess of being upset with other people or events.

I guess as a first for ending my blog with this message... 'You do not know when your life will be demanded of you. Do you believe, TRULY believe, in Jesus today?'

I think I played this song on da piano when I was at Jean/Jane/Lynn 's house the last time after making Loh Mai Gai for Jean/Gloria/Ash/Shin/Hannah/Xinyi omg I'm making myself jealous!! Ahahaha!! I just sing this song over n over again in my head almost everyday... haiz... Wanna compose my own but my music skills really jus super average sia... not a Jay Chou or an Eminem (or even a Backstreet Boy.. goodness I cant believe the era of boybands!!). Ahahaha! Dangs... I think I'm getting overworked these days... but well its SO worth it (I think)... I'm actually working TOMORROW!!! A SATURDAY!! Thats AWESOME!! ahaha!!! Even in church I stopped going for lunch... omgoodness... always rushing home to do more work.. hehehehe... even if its buying soil and setting up potted plants just for fun... but I'd rather miss lunch just to labour in my backyard nowadays... I wonder why.... err....

Funny thing a black dude from my workplace asked 'Hey are u Chinese?' I said 'yes', and he replied 'Wo Ai Ni'.... I... um... ewww!!! OMGGGGG ahahaaha!!

ANOTHER interesting event I forgot to mention... I was eating Nachos (it was opened a few days before, I just wrapped it n put it back in the cupboard) and LO AND BEHOLD a COCKROACH jumped out of it!! I NEARLY threw up!! Ran to the bathroom n spat everything out... but HOW did I manage to escape food poisoning??

Using a very cool method.. ahahaha!! Chopped up three cloves of garlic, SWALLOWED them all with a spoon n water. Then down a glass of (1 1/2 teaspoon) of Apple Cider Vinegar mixed with water... BOTH of these are antibacterial so yeah I made a super duber combo. *winks* ahem... burp..

Ah well happy new year,.. tho its a bit late for that. This year has started off as quite a disaster for me but well, I know there's no problem so big I cant solve, no pain so hurtful that I cannot overcome. Hard to explain in words - I'm physically alive, but almost better off dead. I wake up each day wondering 'why bother'. I eat but never really taste. Breathe but never really smell. *sigh*. But if like this monk in the pic can overcome a tiger bare handed then... omg. Wad the.. Ahaha!! Ah well. My friend Gina from S'pore talked to me like 3 in the morning consoling me n giving me advice abt all sorts of stuff. It helped. At least I know, no matter how much SHIT I go thru, I'm never alone. Never. Never. My 'problems' are SO SMALL in comparison to other people's problems really. But hey I'm only human. I do have the right to be angry. To be hurt. But like this monk SITTING on this tiger, I wanna SIT on my pain n look totally cool. Ahaha!! I'm writing this entry like using blood to write a letter, with a heavy heart n tears wanting to burst out my eyes. But the difference with me from other people is that I'm not emo. Ok next topic.. ahaha!! Jus food for thot on this one.. hehe... in case some of u dont normally get your 3 + 2 Veggies n Fruit daily intake.. I have developed this AWESOME method of getting more fresh veggies on ur plate on an (preferably) daily basis. Hehe... Cherry Tomatoes, thinly sliced cucumbers, shredded carrots and yeah thats garlic.. well I jus thot raw garlic is good for ppl with respiratory problems and its an awesome immune system booster so yea I jus added that one in. U see... one thing I learnt abt Good Eating Habits is to DECORATE ur plate with RAW Colourful veggies. So u see.. I decorate my plate while cooking the mains on the stove. Which leaves very little space for rice and meat etc. Hence u get more bang out of ur daily fresh vegs which our human bodies are DESPERATELY lacking. Cooked vegetables are SO pointless. Whats the use of eating veggies if u're gonna kill all of its nutrients by cooking it right? Ahaha!! So this settles part of it... always have 2-3 pieces of fruit thru ur day to complement this awesomely coloured plate aight. See... being a chef doesnt always mean u have to cook. All these veggies never even touched the stove XD

Well THIS is not exactly the healthiest dish on earth... but I guarantee u the glass beside it is FRESHLY squeezed Orange Juice. I dont ever buy bottled fruit juice cuz having experience working in da food manufacturing business.. um.. well I'll just leave that to ur imagination XD. This is a breakfast. French Toast with banana slices topped with Golden Syrup (I still cant pronounce Syrup can u believe that!!). See!! I STILL manage to add a fruit to a meal. There no excuses!! Ahaha!! Btw this French Toast in case u're wondering - its Eggs, Thickened Cream, 1 tsp of Vanilla Essence, Sugar. Heat up pan with oil + butter. Dip bread into mixture and pan fry. Keep in oven at 180 degrees while cooking the rest. The texture of the bread will be somewhat different after putting it in an oven so do try! Oh yeah some cinammon powder would add some spice to the mixture but I jus din have any. Bleh!!

Thats me cleaning up the house and using barrier spray to keep crawling insects OUT the house... ever since that DAMN cockroach snuck up on my desk!! This is WAR!!

Bizzare conversations with my daughter. Ahaha!! There was once this time where Shin n I were talking crap on MSN... Dunno how the topic started but it ended up about Goldilocks and the Three Bears. So we decided that I should be Papa Bear, Jean is Mama Bear (this is jus as a joke la ok) and Shin will be the Baby Bear.. Then I thot.. so who's gonna be Goldilocks? Yay yay yay this all happened yesterday the 21st Oct 2008 at FCC. It was Jean Foo's 21st birthday... perhaps the most awesome 21st b'day I've EVER seen with my own eyes EVER!! Since mi blog can onli post so few pics at once I'll post more pics next time. I was up since 4 am, went to work at 5 am, finished at 1.30, helped out to prep n cook n clean till MIDNIGHT!!!! I was up for 20 HOURS in one day... so today I took a day off and slept in like a PIG... and after all that I'm STILL tired cuz my muscles are aching. Ahahaha!! But it was fun in the end so thats all that matters!!

Been REALLY busy the past few days,.. havent been able to go online much even to check my blog and will still be bz for the next few days. Looking for work elsewhere, perhaps for part time or wad... trying for PINNACLE (a contracting company that hires chefs and all aspects of F&B workers for various establishments all over Australia). Well SEE HOW la.

OMG I jus have to write this down b4 I forget. I locked my car keys in my car at work today!! Ahahaha!! I looked like I was stealing my own car cuz I had to get a clothes hanger from the workshop and try to unlock the door... but THANK GOD some Kiwis were walking past (one guy had a dead battery, so they were jus hanging around near my car anyway) and they helped me out. Seemed to be proffesionals!! Like the first 1/2 hour was just futile. Then another kiwi dude walked past and helped out. Within minutes CLICK my door was unlocked!! Yaay!!

BUT this means... its actually very easy to steal cars then!! OMG. Wad a revelation!! Ahaha!!

Due to overwhelming pressure I have now updated my long awaited post. Yaaaay *thundering applause*. Incidentally this week HAS been super quick really... din get much chance to savour the days as it slipped away...

Work has been SUPER tiring and like I think I can grow a few extra pounds of muscle at this rate. Ahahah!! OMG I went to the Rise with Sherene on Friday night after Bern's farewell dinner. Think I spent about $100 on alcohol alone!! *gasp* ahaha!! No I din get drunk, its just expensive when u buy it outside. Ok ok so I was 'naughty' so whaaaat? Not like I did anything illegal or wadeva waaad. I mostly jus stood at the side n observed everyone else dancing like cats on a hot tin roof *kekeke*

It's been a 'successful' week thus so far I should say. Or is that a right word to use.. eh.. It's been a great week la. Tho I flunked my HR Exam for the 2nd time n got really disappointed, at least I still got my forkie licence! Ahaha!! A bit too ambitious oso prolly not a good idea. Then again I actually believe God somewhat prevented me from passing my HR exam cuz... I sorta know it. As protection. Hard to explain, but somehow I know that if I DID pass my exam, I would have gone for a truckie job like right now and get into some sort of accident or something really bad loh. I can just feel it somehow. So u see, when things dont go the way u hoped it would be, look on the bright side cuz u neva know if its a blessing in disguise.

Or that I am a really bad driver. Ahaha!! No I wasnt a bad driver, I actually passed all my criteria. But it was just ONE foul-up that costed me my exam. Just one little mistake that flunked me. Ahaha!! Plus I onli had 2 hours of sleep prior to my exam so MAYBE that explains a whole lot more!!

This is a picture of Hannah. Ahahah!! 'Cute' mild curry?? May contain traces of a cheerful hamster... um... Why is Hannah a Hamster? Its one of those mysteries which has eluded even the most genius of minds. Muahaha!! Its very simple. In Jean's blog there was a pic of hamsters like uber cute ones. Then there's Hannah. Everyone suddenly calls me Carlie or Carltie. So Hannah becomes Hannie. Hannie -> Hanster -> Hamster. 10 kudos points for me mate.. laah. aahah!!

Had a phenomenally bizarre weekend. Chris Howard is like a super GENIUS omg he's so cool!! Perhaps the most empowering weekend ever!! The entire 30 + hours which I attended for 3 days were like cracked my skull open sia! Ahaha!! It was all about NLP (Neuro Linguistic Programming), Quantum Physics, Meta-Physics, Hypnosis, Psychology and Goal Setting. Arrrghh... so complicated sia. But then I daydream a bit too much while I was there *guilty!*. Anyway... guess I had my own perspective on living life and well, at least I know a bit on what NLP is all about now. Um... yeah. I COULD try applying some of the concepts someday...

Went to Apsley actually.. ahahah!! I was suprised that JoeJoeWong, Jean, Jane and so many others were totally ABSENT sia. It was like jus a handful of us. Got to know Kristine a bit better today. Actually I knew she existed all along but like 2day probably the 1st time I actually held a conversation wid her. Well of course there was hardly anyone else there so.. ahahah!! Dang. Even Jeanette wasnt there... Dere was like Dave, Chris + Tim, Zac, Tim Goh, Rachie, Abi, Mark and like 2-3 others. THATS IT!!

Big n stressful week ahead. Re-sitting my HR Exam on Tues. I have to be there by 5.45 AM!!!! Oooohh... den followed by Forklift Ticket on Thurs n Fri. Eeeeks!!! I'm gonna be a work-a-holic in 2 weeks for now after all that.

Its going to be BIG days for some other ppl next week. Yaaay!! How time flies huh?!!

Ahahha!! Saw Hannah at Ah Wong today, it was super weird moment. Like cuz I jus finished jogging n was pooped out n like didnt expect to see her working tonite. Ahaha!! For some reason I felt like paiseh or something, din even like make enuff eye contact else I might get misunderstood (ahem!!). Maybe I was jus shy today... ahahhaha!!

I wasnt being rude la ok, I jus felt really weird. Dunno why. Too many things on my mind simultaneously. Din even realise I took my jacket off cuz I was too warm from the jogging earlier. I tried to say something to her wen leaving but she too busy wid work. I even call out her name n customers started staring so I walked out. PSPS aiyoh. Gyaah!!

Going for NLP conference at the Perth Convention Centre from Fri - Sun, so I can't make it to church or Apsley this week. Its all from 9 am - 10 pm (13 hours per day!!). The guest speaker comes ALL the way from America by the name of Christopher Howard http://www.chrishowardcourse.com/

In case you've not heard of him before, he's something like Anthony Robbins, a total nobody who became a multi millionaire within months. Well, I am a bit skeptical, but hey, whats there to lose? Jus attend and see how lor. Guess my motto of life for now is:

Yay dats me today making Otak Otak!!! OMG can u believe I made Otak Otak without looking at a recipe book of any sort?? Yaaay!! Ahahaha!! OMG I look like a big fat dumb muffin... egadz!!

Wad u need is good ol fresh Lemongrass (I was reluctant to get it at first but then yea finally bought it) Onion, Garlic (all in the picture) Plus various herbs - Tumeric, Coriander Powder, Belachan, Kafir Lime Leaves, Chili Paste, n some other stuff (not telling) ahahaah!! Cant reveal all my stuff rite. Besides, NO MSG, NO Artificial stuff wadsoever ok.

Good ol'fashioned Pestel n Mortar. U could always use a blender of course, think it would be much better. But think of how u gonna CLEAN ur blender after using it on stuff like this!! Ahaha!! Crush all the Garlic, Shallots, Lemongrass, Kafir Lime Leaves together. Then mix with the Coriander Powder, Tumeric Powder, Chili Paste, Coconut Cream n Belachan. Up to u if u wanna add any preferred ingredients. I rarely use salt, but use Fish Sauce as a salt replacement, something I learnt from Hans Cafe long ago. Gyaah!!

While waiting for the sky to rain fire... bring the water to boiling point and blanch the banana leaves. Simply dunk it into the water until it becomes somewhat more pliable, then rinse with considerable amounts of cold running water. This makes the leaves less 'crispy' and hence easier to fold the Otak Otak in later.

Now u probably wont get this idea from recipes u find online, but it is always a great idea to Cook-Out your spices to bring out its full flavour before using it as a marinade. Bet not many ppl told u this one before? Cuz they dont wan u to know! Duhh.. ahaha!!

Lastly scoop out pieces of marinated fish pieces (of course you could blend the fish with the marinade into a paste and then it'll be REAL Otak Otak, up to your preference and how much time u have to make it) into banana leaves. And using toothpicks simply poke into the ends and seal the fish inside. You could always use a stapler or power drill but really the metal shavings dont

always go down too well when swallowing...

Finally its all prepped up and ready to be steamed to perfection. Mama mia!!

To make a Tomatoe 'Rose', this one takes a bit of practice. And after a while of not doing it I kinda stuffed up on all three occasions. Ahahaha!! Simply use a really sharp paring knife, cut skin all along the whole tomatoe and make sure u dun break the line! Must be demonstrated live to make any sense of wad I'm saying. Or perhaps a particular Xin Yi could explain better? Cuz she's probably the only one I've seen who can do it as well. Ahahah!! Jean made a different type of flower... a bit like a rafflesia. The following pic should be what it should somehow look like.

Left Pic - dunno why this pic is taken sideways. Rockmelon + Honeydew kebabs with Coconut Mmmm cool stuff. This kind of 'dessert' is the best cuz its presentable, hence making it more appetizing when its in reality simple fruit. A better way to get your daily intake of fresh greens eh. Once again, creativity is the key.
